Chocolate mousse parfait with 
banana and speculous 


.. OK I say ”easy and guilt free” (for my mousse) because what you do is essentially to melt your dark chocolate, mix with egg york, mix that with whisked egg white.  No sugar added!

Some recipes call for cream, butter, and sugar but I like to keep things as simple as possible. Lovely (and oddly sweet enough) on its own. And then I make this parfait as I like having a different texture in each layer.. yum

So here's my recipe. 

Ingredients for the mousse

- 100 g of dark chocolate (I used Lindt Chocolate 70% Dark)
- 1 teaspoon of coconut oil (or butter) - not absolutely necessary but it does make it a lot easier to mix with egg york
- 2 eggs
- a pinch of salt




Method

• Melt the chocolate and coconut oil in a bowl set over a pan of simmering water, stirring, making sure the bottom of the bowl does not touch the water. Set aside.

• Whisk the egg whites and a pinch of salt in a large, clean bowl until they form firm peaks. Do not whisk beyond this stage or the egg whites will start to separate.

• Add the egg yolks (should be at room temperature) one by one, stirring constantly (but don't overdo it - the choc might seize)

• Add the flavour of your choice here - a dash of rum, orange zest, vanilla extract, instant coffee, cinnamon, whatever.. I like my Caribbean theme ( coconut / rum / banana / choc.. heaven!)

• Add one-third of the egg whites and stir quickly and vigorously until well combined.  (I read somewhere that if it's done too slowly the choc might seize and result in a lumpy mousse)

• Stir this mix into the remaining egg whites and mix until all of the egg white has been completely incorporated. (but don't overmix and knock out the air bubbles)

• Chill in the fridge for 2-3 hours, or until set.

Note: Use a rubber spatula. (Have tried with a whisk but far too messy..)


- For the parfait

I put some crushed speculous at the bottom of the glasses, spooned the first layer of the mousse, laid some sliced banana, the second layer of the mousse , some whipped cream with rum on top, then sprinkled sliced almonds and cacao nibs for the crunch. It's a delight.. Hope you enjoy it !
