Chicken Tatsuta Age and Spinach Ohitashi!

 

The chicken is lightly coated with potato starch and then deep fried. It is perfect in Bento boxed lunches, because it is good even when it gets cold. And I learned how to finally make the ultimate boiled spinach Ohitashi. Chef Saito said to make sure the spinach is completely cooled down in the cold water after blanching it to ensure it stops the cooking, and for color. Here, he added some chrysanthemum petals, adding a beauitful color to the spinach. A must try!
