Have you ever tried food
(usually pork, chicken and root vegetables such as sweet potato and yam)
cooked in an earth oven?
Throughout Polynesia in countries like Samoa,
Hawaii and New Zealand local people do this.
Rocks are heated up and food wrapped in leaves
are placed on the rocks and then everything is covered
and left to cook for several hours.
The result,
is a delicious moist roasted food with a nice,
slightly smokey flavor.
This is a modern day
way of getting that same result and flavor.
