しかーし!大多数のオランダ人、魚介類(特に貝やイカ、タコ)を気持ち悪がって食べないそうなんです。もったいないですよね。では水揚げされた魚介類はどうなるか。大半はフランス、スペイン等に売られて行くそうですよ。
The west side of the Netherlands is facing the North sea. The North sea is connected to Atlantic ocean and is a good fishing spot. Fishing is very commonly done here in the Netherlands both as hobby and a business and a lot of sea foods are landed.
BUT! Many Dutch people find the seafood (especially shell fish, squid and octopus) scary, and don't want to eat them. Such a waste.... So how all the landed seafood is going to be? Most of the seafoods are sold to France or Spain.
需要がなければ供給はなし。ということで、ほとんどのオランダのスーパーはほんの少しの魚介類しか売られていません。いつもあるものといえば、サーモン(切り身)と数種の白身魚(もちろんこれも切り身)くらいでしょうか。ニシンもムール貝も季節もんだしねぇ。
で、新鮮な魚介類が食べたい!と思ったらどこへ行くか。ここで登場マーケットでございます。マーケットの魚屋さんには大西洋で取れるいろいろな魚達がいっぱーいです。(大西洋の魚をぜんぜん知らないので、買ってみるものは限られているのですが・・・)
If there is no demand, there is no supply. So most of the supermarkets in the Netherlands sell few seafoods. The things they always have are... salmon (fillet) and a few kinds of white fish (also fillet). Herring and mussels are seasonal...
Then, where should you go when you feel like eating fresh seafood? There is a market! There are many kinds of seafood available in the seafood stalls in the market. (I don't know Atlantic seafood so the seafood I can buy is extremely limited though.)
前置きが長くなりましたが、オランダに来た当初から私が一度は買ってみたいなぁと思っていたのが、タコ。マーケットだし、日本で売っているみたいに茹でタコや切り身なんて便利なものはもちろんありません。買うなら一匹。しかも生(冷凍ですけど)。料理が苦手な私が尻込みをしたのも簡単に想像できるかと思います。でも最近お友達がチャレンジしたというのを聞いて、私も!と、ついにチャレンジしてみました!
Although the intro became long... The thing I would have liked to buy at least once since I came to the Netherlands, is octopus. It is in the market. Of course there is no boiled or sliced octopus available. If you buy it, you buy a whole and raw (frozen). You can easily imagine that I didn't try for a long time. But as I heard that recently one of my friends tried, why can't I as well!?
初めてなので、小さなタコを買ってきました。小さいといっても足の長さは30cmくらいはありましたね。ラッキーなことに内臓も墨も口もすでに取り除いてありました(普通は付いたまま)。なので、それを取り除く工程は必要なし。
It is the first try for me, so we bought a small octopus. It is small but the leg length was about 30cm. Luckily, the insides, black ink and the sharp mouth were already removed (usually not). So I could avoid that step.
たっぷりの塩で揉み洗い(日本のサイトによる)。すると大量の泡が発生します。全体のぬめりを落とすように良くもみもみすること約20分。塩を洗い流して、ヌメリがほぼなくなっていたら準備OK.。ヌメリが残った状態で茹でると生臭くなるんだって。あと、塩で揉むことによってお肉が柔らかくなるんだそうな。
I massaged the octopus with a lot of salt (a Japanese technique). Then it became very foamy. I continued massaging it to remove slimy feeling from the surface of the octopus about 20 minutes. When you wash out the salt and there is no slimy feeling left, it is ready to be cooked. If it is cooked with the slimy feeling on the surface, a fishy smell remains on the octopus. In addition to it, the salt massage helps to soften the meat.
塩を少々加えた沸騰したお湯に足から入れて、茹でることたったの5分。(この泡立ちが洗い不足ではないかと不安になりました。)
The washed octopus was put in boiling water with a bit of salt and boiled only for 5 minutes. (When I saw the foam on the picture, I was worried if the washing was not enough.)
立派な茹でだこの出来上がりです。茹でるときにちょっと塩を入れすぎたので、ちょっとしょっぱくなっちゃいましたが、身も柔らかく、臭みもなく、初めてにしては上出来です。
A great boiled octopus was done! As I put too much salt when I boiled it, it became a bit salty but otherwise it was greatly done with nice soft meat and without fishy smell for the first time.
出来上がったタコはdropさんにパスタサラダに投入していただきました。久々に食べるタコはおいしい!
The boiled octopus was mixed in the pasta salad by Drop. It was good to eat after some time!
感想としては、意外に楽だったかなー。特に茹でるのはたったの5分だし。内臓を取る工程がなかったのが良かったのかも。またやってみよーっと。
後日、anko母に「タコ初めて茹でてみてん!」と自慢げに報告したのですが、母「えっ?茹でるだけやろ?」と全く感動してもいただけず。。。茹でタコがどこでも手に入る日本じゃないんだぞー!
As it turns out, it was easier than I expected. Especially because the boiling time is only 5 minutes. It helped a lot that the insides of the octopus was already removed. Let's try again soon.
Later, I reported proudly to my mother "I cooked raw octopus!". But my mother was not impressed at all and said "Only boiling right?". It is not Japan where boiled octopus is available everywhere!!
