Had the below breakfast at Almont Hotel near Kyoto Station. I don’t like buffe style meal because I put on weight, eating much food as much as I like. Anyway, this breakfast was a buffe, and was a typical Kyoto cuisine. I enjoyed it very much. The typical Kyoto cuisine tastes a little bit sweet in general. I mean all foods for Kyoto cuisine are seasoned a bit sweet.
The two bowls in the center of the top row have Yuba, or the skins of tofu (bean curd). When tofu is produced, this yellow skin like a piece of paper appears. Yuba itself doesn’t have any taste, but it creates special flavor when it is put in soup.
The rectangular dark red thing on the top right is kon-nyaku, jelly-like food made from yam, also called devil’s tongue. The food on the left in the center column is Natto, or fermented soybeans, the color of which is almost always yellow, but this one is black, and the taste of which is not sweet, but these black soybeans taste a little bit sweet.
The food on a yellow plate in the center is tofu. The lower left is a bowl of rice with mushrooms. The lower right is a piece of rolled omelet with a piece of eel in the center of it.
黒いナットウ。やはり甘味があった。
Black fermented soybeans, the taste of which is sweet.
デザート。Sweet rice dumplings with three different colors, and a ball of bean jam for dessert.
