Ingredients ( Serves 2)
2 servings Chinese noodles
Sauce; 1cup water
2tbsp rice vinegar
1 1/2 tbsp soy sauce
1 1/2 tbsp oyster sauce
1/2 tbsp sugar
3slices ham
1cucumber
1/2bag bean sprouts
salt, to taste
Omelet; 2eggs
pinch salt
1 tbsp vegetable oil
red pickled ginger, roasted white sesame seeds and Japanese mustard paste, to taste

1. Mix Sauce
1. Mix together sauce ingredients. chill in refrigerator, if desired.

2. Prepare Toppings
2. Julienne cucumber and ham.
3. Remove root ends of bean sprouts. Parpoil in salted water.
4. Make a thin, crepe-like omelet. Stir salt into lightly beaten eggs. Add vegetable oil to heated skillet and spread eggs thinly over skillet surface.
5. Remove omelet when cooked throuth, Cut in half, then into thin strips.

3. Prepare Noodles
6. Bring water to a roling boil and add noodles. Cook according to package directions,
7. Rinse noodles well.
8. Chill in ice water.

4. Combine and Serve
9. Drain noodles and serve in dishes. Pour on saude from step 1.
10. Arrange toppings and picked ginger on top of noodles and sprinkle with sesame seeds. Serve mustard paste on the side.
