In the end of last year, I had a lunch date with my friends of over 20yrs and we had this signature dish of the restaurant we went: Buffalo wings.
Not only the great time together, I could not forget the fiery yet lingering rich tast and have been craving for it since I came back to England.
It is one of my experimental dish, a combination of several recipes available online. I was a little bit worried if I can replicate it but to be honest, this turned our really really well and the best buffalo wings I ever had.
It takes a bit of time but trust me, it all worth it.

Ingredient (for 6 as starter, 3 for main)
12 Chicken wings
5-6 tbsp all purpose flour
1/8 tsp paprica
1/8 tsp cayenne pepper
1/4 salt
good pinch of fresh grounded black pepper

Vegetable oil for frying
70g unsalted butter
70ml Frank's hot sauce
good pinch of garlic salt

(Optional)
2 large potatoes
3 stalks of celery
blue cheese dressing

Direction
Mix Flour with spices in a deep dish
Evenly and well coat chicken with flour mixture
Cover it and leave in a fridge for at least three hours to set

In a small pan, melt butter in hot sauce. Stir constantly until butter and liquid is well blended.
Sprinkle garlic salt and keep it simmer

Deep fry chicken wings until golden (about 15 mins)
Coat with hot sauce

(While waiting chicken to absorb the hot sauce, you can quickly deep fry some potatoes in same oil)

Serve with some celery stalks along with blue cheese dressing- and of course, do not forget a few bottles of beer.
