A loves thick vege soup. It is very easy, healthy and perfect to use up all forgotten vegetables in fridge. 
I always make in a large pot and have the rest for a lunch next day with slices of nice bread. 
Ingredients 
Any vegetables- here I used....
Carrots 2
Garlic 1
Bird eye chili 1
Leak 1
Cauliflower 1/3
Mushroom 3
Vegetable stock 1
Water 
Milk 1pint
Butter 1tbsp
Salt & pepper

Preparation 
1. In a large pot, put diced vegetables
2. Cover with water and put vegetable stock cube
3. Cover the pot and cook about 30 mins until vege get soft over medium heat
4. Transfer to food processor  and process to paste
5. Return to the pot, pour milk and butter in and bring it to boil
6. Season with Salt and pepper
