This is now one of our top 10 meals we have for dinner, but I have never had creamy meatballs in my life until I moved to this country. To me, meatballs are in tomato sause or barbeque sause- so when I had the creamy meatballs at IKEA, it was quite a big surprise but I fell in love with the richness of the meatballs in cream since then. We like it a bit of soup, on top of creamy mashed potatoes. 
 

Ingredients (for 2)

15-10 meatballs (I always make meatballs* by myself and keep them in freezer. It is really easy and a lot healthier than the ones you can buy in supermarkets!) 
1 stork celery (finely chopped)
1 garlic clove (finely chopped)
1 bird-eye chili (finely chopped)
1/2 medium onion (finely chopped)
1 small carrot (finely chopped)
1/2 courgette (finely chopped)
5-7 mushrooms (sliced)
1 slice bacon (diced)
1 vegetable stock cube 
1/2 pt milk
1/8 pt single cream
5g butter
1/2 lemon
Salt and pepper to taste

2 large potatoes
1/4 pt milk 
5g butter 
Salt and pepper to taste

Direction 
Meatballs 
1. In a large frying pan, heat 2tsp olive oil (out of ingredients) and add chili, garlic, celery, onion, carrots and cook for about 5 -8 mins until onion gets golden
2. Add bacon , cook for about 3 mins to transfer the flavor to vegetables 
3. Add meatballs, vegetable stock and cook for 2-3 mins until meat gets brown outside
4. Add milk in, cover and simmer for 20 mins 
5. Add cream, butter and bring it to the medium heat und cook until thicken. 
6. Remove from the heat, squeeze lemon juice over, add salt and pepper to taste. 

Mashed potatoes 
1. Wash and cut potatoes into small- medium pieces. (I like to have skins on as it gives extra flavor and mixed texture)
2. Cover with water, bring it to boil, cover then cook for 12 mins.
3. Discard water, add milk and butter then mash to your liking. (The ingredients are for very soft texture)
4. On the plate, place one or two scoops of mashed potatoes then pour meatballs over with plenty of sauce. 

  
*Meatballs
Finely chopped onions 1: Minced meat 3
Finely chopped garlic, salt and pepper, chili powder
Cook finely chopped garlic and onions until golden. Leave it to cool. Add into a bowl of minced meat with chili powder and salt  & pepper, mix and knead well. (About 5 mins) Made into balls, freeze in a freezer bag.
