This is the ultimate 5 a day salad recipe. Since I was little, I never liked cooked carrots especially when it's cooked with sugar. Strangely, I love uncooked fresh carrots and this is just a perfect dish for me- crunchy, full of nutrition and tasty. This can be used as fillings for a sandwich, another salad or just a simple but very nice side dish salad. (And very very easy to make!!!)

Ingredients (for two)
2 medium carrots 
2 tsp whole grain mustard
2 tsp Olive oil
Good pinch of salt & pepper 

Directions
1. Cut carrots into very fine strips
2. Put some paper towels in a medium size bowl, add carrots, good pinch of salt and cover with some paper towels. Leave it for at least 15 mins. 
3. Squeeze liquid out from carrots. (It is a lot easier to squeeze them in paper towels) 
4. Add mustard and olive oil then mix well. Add good pinch of salt & pepper to taste.  

That's it- easy peasy, no sweat at all. You can mix into a bag of green salad.
As long as you don't skip direction 2, salad doesn't get too liquidy so you can put them in a sandwich for a lunch or keep in a fridge for 2-3 days.
