Since when A bought me a bread machine, I always wanted to bake some french baguettes. The recipe book came along with a bread machine says I need skim milk powder which I could not find anywhere (I even checked newborn baby food section!). Finally, I could find this key ingredients with help from my friend B, and thanks to her, we finally could enjoy home made fresh baguettes sandwich. 


Ingredients (1 1/2lb)
Baguettes
1 cup water
2 1/2 cups strong (bread) flour
1 tbsp caster sugar
1 1/2 tsp fast action dried yeast powder 
2 tbsp skimmed milk powder
1 egg yolk & 1 tbsp water
Fillings
Any cheese 
Any Italian meat 
Any salad
Balsamic vinegar 
Salt and peper 

Direction
1. Place water, bread flour, sugar, salt, skimmed milk powder ad yeast into bread machine pan. (TIPS: Make sure yeast doesn't touch any liquid before the machine start working on the dough. Use warm water in winter, it helps the bread rise very well.) Select dough setting and press start
2. When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover and let rise in a warm place for about 30 mins.
3. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half (8x12 inch). Roll up each half of dough tightly, beginning at 12 inch side. POunding out any air bubbles as you roll. Roll gently back and fourth to taper end.
(* My hands are too small to work on 12 inch long dough stick, so I cut it in half again. This makes four small baguettes instead of 2 in direction)
4. Place 3 inches apart on a greased paper. Make deep diagonal slashed across loaves every 2 inches apart. Cover and let rise in a warm place for another 30-40 mins until doubled in bulk. 
5. Preheat oven to 190C. 
6. Mix egg yolk with 1 tbsp of water, blush over the top of the loaves. 
7. Bake for 20-25 mins in the oven until golden brown.
8. Let it cool for about 3 mins on a cake tray then cut in half 
9. Put cheese, Italian meat, a small portion of salad then spray balsamic vinegar. Put some salt and pepper to taste, 


I used ementar cheese & Iberico chorizo, brie & prosciutto. Cut them in half and enjoy with a small portion of soup.
