This is ultimate salad dressing, you can use it for pretty much any salad you can think of. My favorite is mushrooms, spinach and snaps peas. It also can be a source for meuniere or sauteed fish. 


Ingredients (serves 2-3)
1 stalk celery 
1 medium shallot 
1-2 eggs (* one egg is enough to serve for 2)
1.5 tbsp mayonnaise light
Salt and pepper to taste
any salad


Direction
1 Chop celery and shallot into very fine pieces (I always use mill to make my life easier) 
2 Let it cool in a fridge for at least 20 mins 
3 Boil eggs for 12 mins 
(TIPS: Bring the water to boil. Add good pinch of salt. Crack the bottom of egg and put them in a salted boiling water. This makes it very easy to peel.)
4 Chop boiled egg in fine pieces, add celery and shallot. Add mayonnaise and salt& pepper in then mix well.
5. Mix with salad
