Here is a confession- I am not good at cooking fish. Although people eat fish/ seafood quite often here, I am not really happy with the small fish selection and its quality in our local supermarkets. Most popular fish are cod/ haddock. Sometimes we have salmon. Tuna is also available but I really do not like cooked tuna. To me, everything is so wrong, its taste, texture and even how it looks (maybe because I spent too long to eat fresh maguro (tuna) in Japan). So we seldom see fish on our dinner table. This is one of my (limited) British fish recipes, MMFP - M's Mushy Fish Pie.


Ingredients (serves 2) 
200~g Haddock/ Cod
1-1.5 tbsp self raising flour
1/2 tsp salt
1/2 tsp pepper 
1 medium onion
1 garlic clove
1/2 leek 
splash of white wine
1/2 vegetable stock cube
1pint semi skimmed milk
1-2 tsp olive oil

2 medium potate
10g butter (or butter substitute)
1/2 pint milk (or semi skimmed milk)
salt and pepper to taste

2-3 tbsp grated cheese (any kind)

Preparation
Mix flour with salt and pepper
Slice the fish fillet into bite sizes and coat them with flour mix.
* White meat fish such as cod/ haddock tend to be very bland or boring. This process not only gives richer flavor, but also prevents fish to get dry and chewy. 
Preheat oven to 190C

Direction
Mash potatoes (Mushy) 
1. Cut potatoes in pieces. (We like to have our potatoes skin on as it gives unique texture but if you do not like it, peel skin off!)
2. Put potatoes in a pan, covered with water and add pinch of salt (*both out of ingredients)
3. Bring it to boil and cook for 12 mins with a lid on
4. Drain well
5. Return potatoes in a pan, add milk and butter then mash 

Fish
1. Slice onions thin, chop garlic in small pieces and cut leeks into approximately 3cm.
2. In a deep frying pan, heat the olive oil and add garlic in.  
3.Bring a heat to low-mid and put flour coated fish in. Once the surface gets crispy, take fish out. 
4. In the same frying pan, add all vegetables in and splash some white whine. Bring the heat to mid- high.
5. Once all the vegetable gets sweaty, add milk and stock. Put a lid on and cook for 8-10 mins.
6. Return the fish and add butter. Add salt and pepper to taste (If required).

7. Transfer into individual sized casserole and covered with mash potato
8. Sprinkle grated cheese on top  
9. Bake it in a oven for 15 mins

We normally have our  Chinese spicy sauce with pie, but this pie has enough flavor on its own!
