None of my friend believes but this is a diet friendly tiramisu. By using 'light' products and sugar substitute this fluffy soft dessert gives us what we need....bottomless, guiltless and pure joy of full flavor after meal. Nice brandy and vanilla extract add rich flavor and expresso gives a sharp kick.  




Ingredients (6 individual size Glass dessert cups)
3 Egg yolks
16g sugar substitute (=100g sugar)
250g mascarpone cheese light 
400g whipping cream light
250ml sweeten strong espresso (=3tsp strong instant coffee in 250ml water)
2tbsp brandy
vanilla extract 
20-25 tea finger cookies
1tbsp cocoa powder


Direction
1 Mix egg yolks and sugar in a bowl and whip until completely mixed. Meanwhile, pour water up to 1/3 of pan and bring it to a simmer
2 Place a bowl over the simmering water and continue to whip until eggs are slightly cooked. (You will see a smooth & runny consistency and the coloour gets brighter)
3 Remove it from the heat and let it cool then mix it with mascarpone.  
4 Whip the cream to firm
5 Mix whipped cream into mascarpone mixture until cheese is fully incorporated and smooth, add vanilla extract for flavour
6 Make espresso & sweeten, add brandy
7 Place tea fingers onto shallow small baking tray and pour coffee over. Let them soak and absorb the coffee mixture
8 Place one & 1/2 soaked tea fingers on the bottom of each cup
9 Pour two tbsp cream mixture on top 
10 Repeat 8&9 again and make a second layer. Smooth the surface with slightly wet spoon
11 Let it cool in a fridge for a few hours
12 Dust cocoa powder over before serving.
