Ingredients(for 330g Vinegared rice)

Rice ・・・・・・・ 150g
Water ・・・・・・・180 ml
Kelp ・ ・ ・ ・ ・ ・ 1g
Sake:・・・・2 tsps (10 ml)

Mixed vinegar
 Sugar・・・・・・1/2 tbsp (12g)
 Vinegar ・・・・・3 tbsp (45 ml)
 Salt・・・・・・・3/4 tsp(3g)


Make mixed vinegar


1 Wash the rice and give it to the colander. Put in a pan, add cold water and kelp, and leave for 30 minutes.
2 Add sake and bring to a boil over medium heat for 10 minutes.
When it boils well, mix it with a rubber spatula to the bottom of the
pot, cover it, reduce the heat to low, and heat it for 10 minutes. And,turn off the heat and leave for 15 minutes.
3 After cooking, remove the kelp and pour rice into the sushi tub.
4 Sprinkle the mixed vinegar over the whole, leave it for about 5
seconds, and mix it by cutting. Cover with a wet cloth until use to prevent drying
