食とライフスタイルのカリスマ、「スローフードの母」と呼ばれる
アリス・ウォータース開業以来40年以上も地元で愛されているレストラン。
季節ごとの地元の新鮮な食材、味や香りとオーガニックにこだわるという
従来のアメリカのレストランになかった新しいトレンドを生み出した。
「シェ・パニーズ」は、全米で最も予約を取るのが難しい店と言われ、
5年前に訪問した際は、旅行計画時にテーブルを確保してから訪問した。
今回予定はしていなかったけれど、幸運なことに前日に予約が取れた。
相変わらず、地元客で店は大賑わい。
そして相変わらず、料理とサービスの質の高さに惚れ直すことしきり。
半世紀を生き、あとどのくらい食事ができるのだろうと考えることがある。
人生に限りがあるからこそ、人は生きるために食べ、食べるために働くのだと。
母の日を迎え、亡き母の手料理が食べたいと思い出しながら、これを書いている。

She focused on fresh, seasonal, local ingredients, flavors and aromas, and organic.
"Chez Panisse" has created a new trend never seen in American restaurants.
It is said to be the most difficult restaurant in the United States to get a reservation.
When we visited five years ago, we had to secure a table when planning my trip.
This time, we had not planned to, but fortunately, we were able to get a reservation the day before.
As usual, the restaurant was packed with local customers.
And, as always, I was left in awe of the quality of the food and service.
Sometimes, I wonder how much time I have left to eat in my left the time of my life.
Because life is limited, people eat to live and work to eat.
I am writing this on Mother's Day, remembering how much I miss my late mother's home-cooked meals.
