ニューヨークで、レストランの開業を手伝うようになって10数年。
これまでたくさんのシェフやスタッフと御一緒してきた。
労働ビザ関係や会社の異動で帰国したメンバーもいるけれど、
その多くは今でもニューヨークで活躍している。
マンハッタンでは、唯一の定休が日曜日というお店が多いから、
シェフ達が集まれるのは、平日閉店後の遅い時間か日曜日のみ。
だから、日曜日の夜は「シェフ・ナイト」。
我が家は築年数の古いアパートだけれど、皆が集まってくれる。
好きな食材を持ち寄って、自由に作って、食べて飲んで喋る。
私はもうとっくに現場を離れているのに、
長い年月ずっと変わらずに、こうして慕ってくれるのが嬉しくて。
仲間がいることの心強さと有り難さを、しみじみと噛み締めている。
お金で買えない信頼関係は、一朝一夕で築き上げるものではなくて、
変わらぬ距離感で、大切に、大切に育んでいくものだと。
新しいことを始めること。具体的に動く勇気。
そこにかけがえのない仲間がいるということ。
素敵な時間を共有できる仲間たちに、感謝をこめて。
Ten years have passed since I started helping restaurant opening in New York.
I have worked with a lot of chefs and staff.
Although some members have returned to Japan due to labor visa relations and company transfers,
Many of them are still active in New York.
In Manhattan, there are many restaurants where the only regular holiday is Sunday,
Chefs can get together only late hours after closing on weekdays or Sunday.
So, we hold "Chef's Night" on Sunday night.
Our home is an old apartment building, but everyone gathers.
Chefs bring their favorite ingredients, make it freely, eat and drink and talk.
I am already leaving the site,
I am glad that they visit us like this for many years.
I am feeling on the strength of having tight friends.
The relationship of trust that cannot be bought with money is not one to build up in a day,
It can be constructed in a constant distance, carefully and carefully.
To start a new thing. Courage to move concretely.
That there is an irreplaceable companion there.
