「MIFUNE NEW YORK」を応援するようになったのは、ひょんな出会いがキッカケだった。
当時フランスのミシュラン星レストラン「Sola」のシェフ吉武広樹シェフを迎え、
2015年秋に盛大にレセプションパーティーを開催した。
紆余曲折あって、ようやく実店舗がオープンしたのが2017年の春。
１階「MIFUNE」には島野雄氏と浦田智弘氏というツートップシェフを配置。
地階には「鮨さいとう」出身の宇井野詩音氏が寿司を握る隠れ家が誕生した。
ミッドタウン、グランドセントラル駅から５分という立地にて、
「AMANE」は開業から数ヶ月でミシュラン１つ星を獲得して話題になった。
たった８席のカウンター席、決して安くはないおまかせコースのみ。
あっという間に予約の取れない店にランキングした「AMANE」。
タイミングよく予約が取れず、なかなか足を運ぶ機会がなかったけれど、
いつだって宇井野氏と落合氏が、笑顔で挨拶を交わしてくださった。
幾度ものロックダウンを経て、静かに営業を続けるなか、
ようやくその機会が訪れた時、すでに宇井野氏の引退が内定していた。
カウンター越しに顔を合わせることに、なんだか照れてしまうほど、
彼の握る寿司は、ネタの１つ１つに愛情が注がれていて、優しかった。
宇井野氏は、まもなくトライベッカで新しい店舗を開業する。
彼の新しい門出にエールを送ると共に、新生AMANEに多大なるエールを。
It was a chance encounter that led me to support "MIFUNE NEW YORK."
We held a grand reception party in the fall of 2015, welcoming Chef Hiroki Yoshitake of the Michelin-starred "Sola" restaurant in France.
After many twists and turns, the actual store finally opened in the spring of 2017.
On the first floor are the two top chefs, Mr. Yu Shimano and Mr. Tomohiro Urata, for "MIFUNE."
On the basement floor, the Sushi chef of Shion Uino, who formerly worked for Sushi Saito, opened a sushi restaurant, "AMANE."
It is located just five minutes from Grand Central Station in Midtown.
The restaurant was awarded a Michelin star within a few months of its opening and became the city's talk.
With only eight seats at the counter and an expensive omakase course.
In no time, AMANE was ranked as one of the most difficult restaurants to get a reservation.
I could not make a reservation at the right time, so I did not have a chance to visit the restaurant.
However, Mr. Uino and Mr. Ochiai always greeted me with a smile when I was at "MIFUNE."
After several lockdowns, the restaurant continued to operate quietly.
When the opportunity finally arose, Mr. Uino had already informally decided to retire.
I was somewhat embarrassed to see him behind the counter.
The sushi he made was so tender, with so much love poured into each piece.
Mr. Uino will be opening a new restaurant in Tribeca soon.
I send him my best wishes for his new start and a big shout out to the new AMANE.
