イベントがあった両日共、ソラは夜の通常営業をした。
１階と地階のテーブルをすべて入れ替えて、昼夜の仕込みをする。
その日のマルシェでの仕入れに応じて、おまかせメニューを考案する。
食材の状態によっては、急遽メニューを変更することもある。
計り知れないシェフの負担を想うと、ただ心苦しい。
だからこそ、絶対に失敗の出来ない企画だった。
すべてが終わった夜、改めてレストランを訪れた。
イベント中に何も口に出来なかった私達のために、
シェフがもう一度すべての料理を再現してくれた。
こんな美味しい料理が、あの時にサーブされていたことが誇らしい。
キッチンスタッフ、サービススタッフ。
連日満席で賑わう店内の空気と、
世界で通用するクオリティーの高さに、
ここがパリだということ、その事実を噛み締めた。
営業を終えたメンバーが、グラスを片手に集まってくる。
目に見えない裏舞台の報告に、改めて個々の人間味を感じて涙する。
表に立つ主役は、シェフとアーティストの二人だけだけれども、
それを支えるチームとしての力をも極めたい。
2016年秋、以前と変わらぬパリの街に励まされる。
日本人として、世界で何ができるだろう。
今はちっぽけな活動でも、いつか必ず大河につながる。
人生に「もし」はないから、目の前にあることをやるしかないのだと。
On the event's days, they opened Sola restaurant for dinner as same as usual.
They replaced all tables of the first floor and the basement, and prepared the
cooking for the lunch and dinner.
Depending on the purchase in the Marche of the day, Chef Hiroki Yoshitake
devises an Omakase menu.
Depending on the condition of the food, he has to suddenly change the menu.
I was sorry for the burden immeasurable of the chef.
So, the planning of the event was must not absolutely be a failure.
Night that all was over, we visited again restaurant.
For us that could not be eat during the event,
The chef reproduced once again all of the cooking.
We were very proud that they served such a delicious cuisine at the event.
There were perfect the kitchen staff and the service staff.
We felt the air in the restaurant crowded with fully booked every day.
It was the best quality of world-class in Paris.
The team members who finished the business came to join to drink.
By hearing the back stage report which is not visible to the eye, I was impressed
by the individual human touch.
Just two heroes, the chef an artist were the most important,
But the team power should also extremely important to support them.
In autumn in 2016, I was encouraged by the previous and abiding city of Paris.
As a Japanese, I wonder what can be done in the world.
Even in the tiny activity now, hope it will lead to the big result someday.
I only do that I can.
