「The Burn」のシェフ米澤文雄氏がニューヨークにやってきた際、
以前から気になっていたお店に連れて行ってくれた。
ウォール街、金融業界で働く人々が、夕方早い時間から集う新名所。
昨秋ミシュラン星を獲得し、乗りに乗っているジェームス・ケント氏は、
かつてレストラン「ジャン・ジョルジュ」で、シェフ米澤氏と同僚であった。
その後「Eleven Madison Park」や「The Nomad」といった名店で実力を磨き、
昨年、敏腕マネージャーとして知られるジェフ・カッツ氏とタッグを組んだ。
ダウンタウンにそびえ立つアール・デコ調のビル路面。
レジデンシャルと同じエントランス、ロビーを抜けて店内へ。
120席のダイニングとオープンキッチンは、時に騒々しくなりがちだが、
天井の高さと品の良い客層たちが、エレガントな空気を生み出している。
独創的で洗練されたメニューの数々は、どれも魅力たっぷり。
オーストラリア産のワインを積極的に提供している理由を聞くと、
売上の一部を森林火災復興支援に当てているという。
実績のあるシェフが投資家に見初められて、新しい店を出すチャンス。
そこにはもちろん実力が必要だけれど、もっと大事なのはその人徳。
アメリカンドリームを手に入れたシェフの笑顔はどこまでも輝かしい。
春にはルーフトップバーがオープンする予定。
911テロ事件以来、少し苦手なダウンタウンだけれど、また訪れてみよう。

There is a chance to open a new restaurant when a proven chef is found by investors.
Of course they need the ability, but more importantly is its morals.
The smile of the chef who got the American Dream was brilliant.
The rooftop bar will open in this spring.
I do not like come to downtown since the 911 terrorist attack, but would love to visit there again.
