世界の中心ニューヨークで、飲食店業を営む。
それがいかにハードルの高いことであるか、想像に難くない。
苦労の末に開業までこぎつけても、たった数年で撤退するケースも多く、
まず10年を超え、さらに営業利益を出し続ける店舗は非常に稀。
そんななか、今月で創立50周年を迎えた日系企業が存在する。
マンハッタンからアップステートに向かう途中、
高速道路87号線から左手を見上げたヒルバーンという小高い山に、
「火鉢レストラン」として有名な「Mt.Fuji」レストランが鎮座している。
連日数百名の顧客が訪れ、週末のウェディングでは1000人超のパーティーも企画。
そんなレストランの顔とも言えるラウンジが、今春新装オープンした。
「山」という意味と、オーナーのファーストネームを絡めて「Y’s LOUNGE」。
2500sqftのスペースに、木目を基調とした粋な空間が広がる。
大理石のカウンタートップに、群青のバースツールのバランスも美しいが、
大きなガラス窓の外に広がる自然の借景が、何より心地が良い。
篠原シェフが新しく開発したバーフードも非常に興味深く、
日本から運んだ食材を駆使して、オリジナリティー溢れるメニューが完成した。
オーナー曰く、「ここで日本を体感していただきたい」、と。
日本食がアメリカナイズされた「火鉢」人気はすでに不動の地位にあるけれど、
ここから発信される新しい日本が、次はきっと創立100周年を迎えるのだろう。
