母は裏千家の茶道師範で、お稽古のある日にはいつも「練り切り菓子」と
「お干菓子」が用意されていて、私はその残り物を楽しみにしていた。
和菓子を調達する店舗は様々だったけれど、季節物の練り切りは予約をして、
指定された時間に取りに行く、それぐらい繊細で上質な物だと学んだ。

茹でた白いんげん豆や白アズキに、砂糖か蜜で甘みをつけた「白あん」に、
芋や米粉といったツナギの食材を入れて調整したのが「練り切りあん」。
「練り切りあん」に繊細な細工をして仕上げる「練り切り」和菓子は、
ニューヨークでは、滅多にお目にかかることはない。
そんなニューヨークで、練り切りのレッスンが受けられる。
友人にお誘いいただき、和菓子好きの私は即答で参加を決めた。
一番調整の難しい「あん」の部分は先生が作っていてくださったので、
私たち生徒は、粘土遊びをするかのように、楽しく作業を終了。
「ハロウィン」をテーマにした可愛らしい練り切りが完成した。
一緒に受講した方々は、皆とても手先が器用で、
私も元ジュエリーデザインを学んだ身だとは言い出せなかったけれど、
スパチュラーでワックスを削っていたあの感覚を思い出した。
茶道と同じく、和菓子の世界も本当に奥が深い。
こういう文化を伝えている日本人がいることが、本当にありがたい。

I heard be a friend that we could take Nerikiri Lesson in New York.
I decided to join with a quick response, since I loved Japanese sweets.
The teacher made the “An” part, which was the most difficult to adjust,
We students finished the work happily as if playing with clay.
A cute "Nerikiri" with the theme of “Halloween” has been completed.
The people who attended the course were very dexterous,
I couldn't say I had learned jewelry design before,
I remembered that sense of shaving wax with a spatula.
Like the tea ceremony, the world of Japanese sweets is really deep.
I'm really thankful that there are Japanese people who convey this culture in New York.
