ちょっと本気で関西風の汁を作ってみます。愛媛県のマルトモの「だし取りに煮干し削っちゃいました」を買いました。
As you know, I am into Romen and soba soup of Tokyo style. However, my soba soup I cook as Tokyo style can't impress my partner so far, therefore I tried to cook soba soup of Kansai style seriously. I bought sliced dried sardine product produced by Marutomo based in Ehime.
まずは昆布で出汁を引きます。
I boiled dried kelp in hot water of around 60 degrees celsius for few minutes. Don't boil in peak boiling hot water because it could make some strange flavor from kelp.
その後で煮干しを入れて弱火でじっくり出汁を取ります。
After that, I boiled that dried sardine into this soup for around 10 minutes on weak flame. I packed 20g of dried sardine in a small mesh bag for reducing a process.
関西風お汁には欠かせない本醸造ヒガシマルしょうゆ うすくち。関西では圧倒的なシェアを誇っています。
Higashimaru brand thin color soy sauce is neccesary to cook Kansai style soup. I am pretty sure that the market share of soy sauce in Osaka is dominated by Higashimaru brand.
砂糖小さじ2杯、みりん少々、薄口しょうゆ30mL、塩適量
I put 2 tsp of sugar, few mirin, 30mL Higashimaru brand soy sauce, and appropriate amount of salt.
むじなそばを作りました。
うんうん、完全に関西風です。これは美味いな。砂糖はもう少し減らしても良いかも。うどんに合うな、絶対。次はうどん作ってみよう。それに来年の年越しそばはこれにしよう。
I cooked Mujina soba noodles, it means thin fried tofu sheet and fried flour balls topping. The taste of the soup I cook this time was like almost Osakan style. It was really good but there is still a space to improve, a tsp of sugar would be better. And the soup would definitely be suitable with udon noodles of Kansai style. I am going to cook udon noodles next time by the soup recipe and I will cook year-end soba noodles for my partner by the Osakan style soup.
同じように昆布と煮干し、にんにくでスープを取って、かえしと塩と鶏油でラーメンスープを作りました。あ、やべ、お店クオリティ。めちゃうまい。ラーメンにはやっぱり鰹節よりも煮干しなんですね。
I cooked ramen noodles on the other day. The recipe of soup was that base soup by dried kelp and sliced dried sardine broth and garlic, and seasoned by few kaeshi, appropriate amount of salt and plenty of chicken oil. The ramen noodle is by Kikusui in Hokkaido.
It was really good. I believe that my ramen noodles deserves to serve at a ramen house. And I realized that sardine broth is better than bonito broth for ramen noodle soup.
