I love soba noodles. I always look for dried soba noodle products I have never tried. I found this, Hida Takayama Shokawa Genryu Soba, at the souvenir store in GIFU SEIRYU-SATOYAMA PARK.
荘川産石臼粗挽きそば粉を50%以上使用して、岐阜県高山市の人気蕎麦屋さん蕎麦正本店の監修で作られています。期待しちゃいますね!
This dried soba noodle is produced by Nagaya Works Corporation that I have never heard the company and never tried this dried soba noodle. According to the information of ingredients, this is produced from more than 50% of buckwheat flour harvested in Shokawa town, Gifu. And this soba noodle product is directed by Sobasyo Honten, the real soba noodle restaurant in Takayama city Gifu. These specs can make me expect good taste.

To wash soba noodles after boiling in chilled water is the important process to make its texture of soba noodles better. You shouldn't skip.

ほぼお店で出てくるような蕎麦ですね。こういう出会いがあるから干しそばの旅はやめられないんだよなあ。
It was really good with rich buckwheat flavor. This was more than 700 yen, very expensive, but the quality deserves its price. The texture and taste were like ones that are served at genuine soba noodle restaurants. A bit thinner is better. This kind of encounter with good dried soba noodles encourages me to continue my journey of dried soba noodles.
福井っぽいおろし蕎麦にしました。夏場はよく食べます。
Cold soba noodles with grated Japanese radish. It was good. It is like a soba noodle style in Fukui, isn't it? I often cook it in every Summer.

御徒町の吉池で購入した北寄貝サラダ。北寄貝を食べたのは初めてかも。良い食感ですね、美味しい!
This is a salad of Hokkigai (Sakhalin surf clam in English) bought at Yoshiike in Okachimachi. This is maybe my first time to eat Hokkigai. It was really good with crisp texture and without any strange flavor.

でも二枚貝っていうことを全然知りませんでした!(笑)
But I didn't know Hokkigai is clams.
昨日は午前中出張、昼に会社に帰る前に新橋駅前のかのやでげそ天そば。徐々に徐々に値上げしてますね。
I had a short day business trip to Kawasaki city, Kanagawa in the morning yesterday. After the business and before coming back to the office, I stopped by Kanoya in front of JR Shimbashi Station and ate geso-ten soba noodles. It was 580 yen. The price of geso-ten soba noodles was 560 yen in 2023, 520 and 490 yen in 2022, and maybe was cheaper until 2021.

この新橋のかのやはオペレーションが素晴らしいです。ピーク時は多くのお客さんが殺到しますが待ち時間はほぼなし、熟練のスタッフのなせる業です。これからもお世話になります。

Kanoya in Shimbashi is really popular but its operation is really good, almost perfect. Skilled staffs and chefs are operating to serve soba and udon noodles, I assume that they have more than hundreds of customers per an hour in peak time but everyone doesn't need to wait much time.
It was good but I no longer am satisfied with geso-ten soba noodles of Kanoya because I already know that there are better soba noodles. But Kanoya will help me by the location and less time for lunch. Anyway, I charged myself gesoline.
