I eat soba noodles almost everyday because I love soba noodles! I bought ISHIUSUBIKI SOBA at YOSHIIKE in Okachimachi. This dried soba noodle is produced by Tamagaki Noodle Factory that produces TSUMARI SOBA.
今回は舞茸天そばを作っていきます。
I tried to cook maitake-ten soba noodles.
Recently, this kind of pre-cut maitake mushroom is sold at grocery stores. It is really convenient. It was less than 100 yen excluding tax.
まずはぽるなれふさんにもらった生地を用意します。固めにね♥
I prepared dough by mixed flour dedicated for tempura given by Polnareff-san. Be careful not to put much water, need to prepare the dough hard and sticky.
で、舞茸を入れてマジェマジェします。あ、生地足りなかったかも、やべ💦
Put cut maitake mushroom into the dough and stirred them. The amount of dought might haven't been enough.

で、揚げます。
Fried it on a pan. This dedicated flour is special, I can cook it with less amount of oil on a frying pan.
お、いいじゃんいいじゃん。舞茸の良い香りがします。でもやっぱり玉垣製麺所は喉ごし重視で温蕎麦には合いませんね。
I cooked the maitake-ten soba noodles well, better than I expected. The maitake tempura had much flavor of maitake but the dried soba noodle was ordinary. I realized again that Tamagaki Noodle Factory focuses on smooth texture of soba noodles too much, not suitable for hot soba noodles though.
広島のアンテナショップで地酒亀齢を買いました。うーん、って感じです。これでは人気の蔵に太刀打ちできないよなあ。
I drank KIREI, local sake in Hiroshima prefecture, I bought at the antenna shop of Hiroshima prefecture. I felt too classical taste. I felt this kind of classical sake doesn't have competitiveness against recent good sake regardless a scale of brewery.
広島がんすと合わせました。がんす、ご存じですか?
これ、結構イケます!美味い!
I drank the sake with GANSU that I also bought at the same antenna shop of Hiroshima prefecture. I have never heard of GANSU but it was really good. It was like fried fish cake including onion and red hot chilli pepper.
