-For much longer than our peers, we've invested in warehouses and computer systems to meet Japanese cusomers needs for transport between foreign countries. This places us in a position to compete globally and we should leverage this advantage to attract non-Japanese firms.

-Usually, my taravels are limited to places within Japan or going to visit family back in the United States, but if I got a chance, I'd love to see as many countries as possilbe. I'd love to see histrical sites, like Angkor Wat and try all different kinds of food especially Vietnamese food. How about you? Do you have any recommendations?
- In Asia, every country or region has plenty of attractions. But if I have to narrow down to one, it will probably be Taiwan. I enjoy walking through the back streets of cities to feel the history and the sense of daily life. And I love interacting with locals. So, I found cities such as Taipei, Tainan or Kaohsiung very appealing.

What's the problem with writing about Japanese food in a bilingual fromat?

So speaking of your book, the wonderful and dlicious in Japan, it's filled with love for Japanese food. What message do you aim to convey to readers through your book? I think that question really depends on who's reading it. I was very lucky, very fortunate to be able to create a book that covers a wide variety of target audiences. It's a bilingual book. I wrote both the Japanese and English text and uh... the idea was to create a book that would be interesting to Japanese readers as well as English speaking readers. And the problem with that is when you are writing factual topics about Japanese food, the base of knowledge is different depending on the target audience. So people living in Japan would understand these foods and they're not surprising, and yet an English-speaking reader may not know about these foods. And so the tricky part was finding a way to write the text in which it was interesting to both parties and what I ended up writing was a book that talked about why these foods are interesting from foreingners perspective, but uh, from a Japanese perspective, something that might seem every day and normal, something they always assumed was just average for that type of food. Being able to see that food from an outside perspective and understand why foreigners find that interesting.. uh... is what I wanted them to get out of the experience and so the goal was, yes, to create text that was interesting to both targets, to be a sort of guide, I would say, to people who are also studying English and studying Japanese and to actually be used as a travel guide around Tokyo. So it wasn't just, you know, here's some beautiful foods from Japan. I also included the shop information and what the menu's specific item was, and we included the prices of the items, so it has multiple uses. So my goal was again, because I like doing many things, was for my book to kind of hit a number of different targets. It's not just a book of pretty illustrations of food. It's a book that also talks about the culture behind the food and it also guides you to restaurants where you can eat the food.

In the expample, A behind the B. A is resposible for causes or leads to B. A provides meaing or context for B. Kayleen mentioned that her book talks about the culture behind the food, meaning the cultural elements that explain or give context to the food. You may hear this paired with other words such as behind the music, which would describe things like, how that music was made, stories about the musicians or what let to its creation.

Durian emits a stron odor. So, we've considered it carefully. We discovered that there are durian-based chocolates and cakes in Southeast Asia. So, we thought just adding a subtle flavor would be acceptable.
As for pandan, we were aware that it's a common ingredient in dishes throughout Southeast Asia. But we weren't convinced that it would match with matcha flavor. It cuould enhance the aroma and taste of our chocolate.
