今日はお酢の種類のご紹介です。
三杯酢や二杯酢、何が違うのかよくわからない、という方、意外と多いのではないでしょうか?
そこで今回は、三杯酢、二杯酢、甘酢の作り方と使い分け方を紹介します。
酢の物はみんな同じ味というわけではなく、お酢に加える物の分量の割合などによって使い方も違ってきますので、知らなかったという人はぜひ覚えておいてください。

All taste of vinegar are not same, the kind of vinegar is depend on food materials
Sanbaizu
材料:Ingredients
1.酢:Vinegar 3 Tbsps
2.しょうゆ:Soy sauce 1Tbsp
3.砂糖:Sugar 2 Tbsps
If sourness is too strong, add Soup-stock 1.5 Tbsps
(How to use)
Sanbaizu is most popular vinegar dressing.
It is cooked easy just mix vinegar & soy sauce & sugar.
Sanbaizu is suitable for all “Sunomono” especially for vegetable and fish and shellfish
一番よく使われる三杯酢ですが、酢、しょうゆ、砂糖をそれぞれ分量どおりに混ぜ合わせるだけで簡単に作れます。酢の物全般、特に野菜や魚介類などの和え物によく使われます。
“Nihaizu”
材料:Ingredients
1.酢:Vinegar 3 Tbsps
2.しょうゆ:Soy sauce 2Tbsps
If sourness is too strong, add Soup-stock 1.5 Tbsps
<How to uss>
ニ杯酢の大きな違いは砂糖が入っていないことです。そのため甘みがありません。
わかめや貝類、海老やイカ、白身魚などの魚介類の酢の物などに向いています。
The most difference point of Nihaizu is without sugar.
Nihaizu is suitable fish and shellfish like Shellfish and seaweed, squid and shrimp, white fish.
“Amazu”
材料:Ingredients
1.酢:Vinegar 3 Tbsps
2.砂糖:Sugar 3 Tbsps
3.塩:Salt 1/2 Tsp
If sourness is too strong, add Soup-stock 1.5 Tbsps
<How to use>
野菜類を甘酢と和えて、しばらく置いておくと甘酢漬けになります。
大根やにんじん、生姜、みょうがなど色々な野菜で甘酢漬けが作れます。
Mix vegetables and Amazu and put them for a while.
It becomes pickles.
Amazu is suitable various vegitable like white radish, ginger, carrot.
