How to prepare Miso Soup
Miso Soup is household in Japan!
Many foreigners
do not know how to prepare the Basic stock (Dashi)
First of all what it come from?
Are there any alternatives
of Dashi like granules Dashi?
I introduce one of the popular Dashi which comes from
Kombu (Kelp) also I introduce Miso soup recipe which is used on Kombu Dashi

English following
【材料】4人分
春キャベツ 2枚
新玉ねぎ 1/4個
アサツキ 適量
水 4カップ/ water 4cup
麦味噌 大さじ4/
Barley and Soybean based miso 4tbsps
乾燥昆布 20cm/ Dry konbu kelp 20cm
醤油 小さじ1.5/soy sauce 1.5tsp
【作り方】
1.ダシを取る
ボウルに水を入れ昆布を2~4時間入れておく。時間がないときは火にかけて沸騰したら火を止め20分くらいおく
2.1の出し汁にキャベツ・玉ねぎを千切りにし鍋強火にかけ沸騰したら中火にする
3.食材に火が通ったら(中火にして5分くらい)弱火にしおたまに味噌を入れ少しずつ溶かしながら入れる
4.お椀に入れアサツキを入れたら出来上がり
味噌は少しずつ溶かしながら入れて味を調整して下さい
(Basic Recip of Miso Soup)
1.Fill a pot with the dashi stock or cold water with granulesnd dashi,and place it over heat
2.Add ingredients.
3.Turn up the heat to high. When the liquid comes to the boil,turn down the heat to medium.
4. Make sure the ingredients are thoroughly cooked, and turn down the heat to low. Add miso in a ladle, and gradually dis-solve it into liquid.
