It's still very hot and humid here in Tokyo, but we have started our taping for our Autumn and Winter episodes of Dining with the Chef.





 

Soon to be aired on 10/29, Chef Saito teaches how to make sukiyaki using various mushrooms, such as shiitake, maitake, and enoki. 

 

What's great is that you can prepare it in the kitchen and serve, or you can cook right at your dining table!




 

Another delicious dish is the special soy sauce with dried shiitake. This sauce should be called the magic sauce, as it's full of umami flavor and you can use it on anything!!

 

Starting in December, Chef Saito will teach us how to incorporate seasonal ingredients in kaiseki dishes. Be sure to tune in for that too!
