Hey y'all.

Here's another food blog.  God, I'm becoming a food critic.  But you know, I really enjoy food!  Both eating and making!  This is such a delight to be able to create something creative and to taste something tasty.  

Today, my first creation of food was Eggplant Tomato Pasta.

Tomatoes which were sitting on the counter for a while were going bad and I couldn't waste such beautifully ripen things in my kitchen.  So I chopped them up and roasted with eggplant slices and garlic chops.  But...  Here's the thing.  My mom doesn't have an oven that I've known as a typical oven.  Hers is super tiny that I can't roast them as I used to with my ex oven (sigh).  There's got to be some adjustment here.  But you know I can't afford one I would like to have right now so I got to compromise at this point.  So I roasted them and cooked them afterwards.  

There's not much to do after cooking other than seasoning by sea salt.  And olive oil.  Tada.  That's it.  That's all, folks.  It's super easy.  And I missed it so much!  Ever since I came back here, I've been eating Miso soup all day everyday that I got kinda tired of it.  I know the nurtrition part of this excellent thing but everyday eating the same old thing ain't my cup of tea.  Sorry mommy, I'm not complaining, I'm just talking to myself 😝

Anyways, I was so happy that I listened to my inner voice this morning.  As soon as I woke up, I thought of myself how I could be creative today.  Then I fantasized about making an Eggplant & Tomato dish.  And this is what I manifested today.  This is how I roll.

Creativity feeds my soul.  When you are hungry, you gotta feed your soul with your creativity.  That's the food for thought for today.
