Last Friday I visited a factory of Japanese fish cake “kamaboko”.

Kamaboko would be one of the funniest food to foreigners.  Some people say it tastes like rubber, but for Japanese people including myself, kamaboko is a kind of soul food, not for everyday but periodically we need it.

And sashimi raw fish of Kin-me dai, a gold eyed red snapper.

The manufacturer explained that the well water here contains suitable calcium so the processing fish meat to kamaboko goes properly.
