How I make my vegan pancake...

First, I grow lots of green leafy vegetables such as Sri Lankan spinach, Abika, capsicums and so on... in addition to Paw Paw (papaya), passion fruits, and pumpkin.

These Australian weeds are edible.
I also grow pumpkins. 

Now steam pumpkin pieces. If you boil them, dont over cook it.

Meanwhile, chop up the green leaf vegetables.

Add seasoned flour with baking powder. I used Okonomiyaki powder as it has lots of flavours mainly ocean. See below. 

Alternatively, you can use a mix of wheat flower and potato starch with a bit of salt and flavours such as ginger, garlic, turmeric, just don't forget to add one teaspoonful of baking powder.


Add an egg, an option for a not-so-strict vegetarians.

Then as an option, grind salted (if not salted, add a bit of salt) peanuts in a pestle and add two teaspoonfuls into the mixture. 

Mix well with a little water. Then heat a pan, grease with olive oil. 
Pour the dough on medium high heat and leave it for about a minute, during which 
you season the steamed pumpkin with a bit of salad dressing of your choice.
I used sesame seed creamy sauce.

When you see bubbles coming up on the dough, add the pumpkins, followed by halved mini tomatoes. 

Then it's time to flip it over!!
Once flipped over, switch off the heat and leave it for a minute.

Then pour it onto your plate, with the colourful side up with pumpkins and tomatos.

That's it!!
