Hi everyone:)

There are many different kind of Ramen in Japan.And I introduce you one of my favorite it

It is the Tukemen!!


I’ve asked my American friend whether you know the Tsukemen or not ,but he didnt know it until came to Japan,and he tried it and then he liked it:)

I tried to make Tsukemen at home.

It was easier than I expected

Ingredients

For 4 servings 


▪️2green onion

▪️2 cloves of garlic

▪️2tablespoons sesame oil

▪️4 noodles ※I recommend to use a thick curly noodles .

▪️kamaboko ,as you like 

▪️char siu ,as you like

▪️menma (seasoned bamboo shoots)

▪️2 boiled eggs





Sauce

▪️water 800ml

▪️mentsuyu  200ml ★describe it below

▪️2tablespoon sesame oil

▪️1 tablespoon soy sauce 

▪️3 teaspoons Kezuriko (shaved powder )★describe it below

▪️1 teaspoon ground sesame seeds



Preparation 


1.finely chop 2 green onions and 2 cloves of garlic.





2.put sesame oil in a pan and heat up.after heating,add half of green onion and all garlic minced.

It stir-fry with low heat until they change into brown. Remaining green onion is going to use later.




3.mix sauce ingredients and stir fried green onions and garlic , and boil on medium heat.

stop heating after boiling.



4.It lightly stir-fry remaining green onion minced with sesame oil and put it into sauce 


5.bring large pot of water to a boil  ,put the noodles into it. 

The noodles is ready,drain it using with strainer and rinse noodles with running water and strain again 


6.Itadakimasu!







★Mentsuyu is a seasoning which is mixed with stock,soy sauce ,mirin and sugar 


★Kezuriko" are gleanings of powder which is left over after dried fishes (such as a dried bonito, dried blue mackerel, and dried sardines) are chipped off to produce "kezuribushi" (shaved pieces).
