Yes, it's always tea time in our house. How often do I drink tea? I guess it's around 20 cups a day! Does that sound a lot? Well, it's a pot or two in the morning, and then continual pots all through the day.

The nicest thing about tea is that there are so many flavours that it's easy to choose a different one to match your mood.

For example, a great breakfast tea might be Assam, then some Ceylon Dimbula at 11am with biscuits.

After that, have an Uva at lunch, and then Darjeeling in the afternoon with cake.

In the evening, I personally like Earl Greys. They are sophisticated teas and go well with a firesidechat. Finally, after dinner, a good Keemun or other Chinese tea is excellent.

Recently, I am enjoying Facebook. There are lots of nice tea pages there, and I recommend you join it. I'm sorry, I don't use Twitter, Netbook, or Mixi. But the tea community is everywhere, online and offline. If you want to get in touch, please send me email!

First, let's find out what a fruit tea actually is...

Tisane is not really a fruit tea.. it's an infusion of herb, vegetable, spice, or fruit matters but normally does not contain any actual "tea" in the sense of the leaf of the camelia plant. Saying that, a tisane can be most relaxing and refreshing, and is enjoyed by millions of people all around the world.

Flavoured teas include fruit teas but also have spices such as cinnamon or ginger.

Most traditional fruit or flavoured teas are based on a normal tea with some fruit essences added. This can be done in various ways. For example, the original fruit tea was Jasmine tea, made in China. Fresh green leaves were left in a stone room and heaps of jasmine flowers added. As the flower buds opened, small amounts of jasmine flavour migrated to the tea which gradually took on the essence of the flower. This was repeated many times and the result was a delicate and exotic flavoured tea.

More recent technology means that most fruit teas these days are made in something like a tumble drier; warm air is blown through the tea leaves in a drum as a vapourised oil is passed through; almost any flavour can be added this way and it creates a very pleasing and interesting tea.

Hey everyone, my name is Paul from M&P's Tea and this is my tea blog.

Do you feel the cold? These days, Japan is getting older and greyer, and many people have problems moving or with bad circulation. The solution is making a nice chai! How can you make it easily? Well, the best way is to heat up some milk in a pan and add a good fine Ceylon BOP leaf. Keep it hot but not boiling or the milk will go bad.

When it's starting to get a good colour, add some spices. The best ones are ginger and cinnamon or perhaps cardamom. If you want, you can add a little brown sugar as well.

Make it strong anyway, and keep it hot.

Of all the ingredients, ginger is the best for helping people with arthritis and poor circulation, so if you have old family members, why not make them a nice cup of chai now!!!
