オールドスクール ★ OLD SCHOOLOrigin of 'Ramen' is Japanese pronunciation. But origin of Japanese Ramen is Chinese 'Ramien'. It is widely accepted that Ramen is Japanese noodle while Chenese noodle is different from it. I'll discribe about a couple of noodles as below with abandon.


My first choice is SOBA which is represent Japan. SOBA is made from wheat its depend on type of wheat though. Usually gray colour and fancy flavor especially fresh fluffy one. Also dip sauce is depend on area but in generally soy dashi with soy sauce with spring onion, ginger, wasabi and stuff.


Second favorite is PAD THAI, in other words THAI stir flyed soba. This kind of noodle is made from rice. Looks ibory white color its almost no flavor. At a asian market we can easily find out rice noodle which has to soak in the hot water 5 min to 6min after that drain out bofore cook it. I confess honesty I don't know how to cook it properly so you should check it out on the web.


Laksa is lovely. Unfortunately it seems to hard to make start from scratch. You can buy laksa paste at the asian market as well. If you get it the other ingredients are easy to grab next door. Mainly coconats milk, flyed noodle (broad/thin), flyed tofu, chicken and spring onion. Finally I'll give you a advice before eating laksa, its oily because of oily paste and ingredients. You must be imagine it naturally however those ingredients add awsome aroma and fabulous taste.
