"It's all about healthy living making sure we exercise and we get out there and we do everything we can to have a healthy lifestyle."
Before the bike kitchen, the closest shop was more than 20 miles away. The new shop is at 1241 Bear Mountain Boulevard.Canno Design's Gabrielle Cano and Carey Jackson Yonce - also behind the new Wishbone in University City and Taqueria Feliz in Manayunk - artfully and efficiently broke up a single, high-ceilinged space with seating a series of lovely wooden tables, a center counter with prepared foods, fresh produce bins in the front window, refrigerators and freezer on the side wall, and a coffee counter Four Barrel is the joe of choice and meat/fish counters along the back wall.Tim Smith, aka Mr. Tim, was ready to walk away from the restaurant business. A heart attack in the spring can hasten such a departure.
Thirty-plus years of long days, most recently as owner of the highly successful and critically acclaimed Mr. Tim's Country Kitchen on South Presa Street, had taken a toll.Smith was staring at his new menu: bypass surgery, recovery, sell house and restaurant in San Antonio, European vacation.Then possible early retirement at age 49.But a funny thing happened on the way to his follow-up appointment.Smith couldn't stay away. On the advice of a neighbor in San Antonio, Smith was sent toward a former Chinese restaurant in La Vernia. "I didn't even know where La Vernia was," he said.He was sold. Fifteen days of what Smith called "cosmetic repairs" — most undertaken by the bypass patient himself — and Mr. Tim suddenly had put early retirement on hold.
