お昼は昨日打った福井在来種MIX(2012~2018)24メッシュ・九一を割子で。

2019年産 #風の蕎麦 を32メッシュの外二で。白く見えるのは挽かずに残した澱粉質の粒。32メッシュが入っても茹で切れしそうになかったから次回は24メッシュも入れよう。

蕎麦汁は大社バージョンと普通の割子汁の二種類をかけて食べ比べてみたが、大社バージョンはやっぱり甘かった。

2019年産・自家栽培の #風の蕎麦 を27㎝臼で製粉。上臼を浮かせ気味にして澱粉質の粒を残し、コリコリ感を出す #三次元製粉 。 27㎝臼は上臼が深成岩(閃緑岩?)で下臼が火山岩。

32メッシュ下の粒度分布が16%とかなり多め。40メッシュ下は62%なので普通なら透明感がでる歩留りだが、 #風の蕎麦 は甘皮がかなり強いのでたぶん無理。

忙しくて去年から倉庫化していた #蕎麦基地 が今日で9割がた片付いた。あとは小物類を洗って移動させれば玄蕎麦の製粉を始められる。
