I usually suggest that if you don't want to, or can't afford a full bar, a mixed approach is best and well received by guests. Having a bubbly handed to you straight after the ceremony is a lovely touch to start the event off well. The option of a cash bar until dinner is totally acceptable, if guests know in advance that this will be happening and their options for paying.  

A beer and wine service is welcomed through dinner, and then have the DJ or MC announce that the bar is open for guests to purchase drinks after dinner. This is a way to treat your guests well and not spend a fortune.
