In Canada, you should pay tips when dine in a restaurant.
１．どういうときに払うの？
I usually paid it if the servers carry my food to the table. Sometimes, they give it in front of a counter like Starbacks.In this case, tips are not must
店員さんが料理を目の前まで運んでくれる形式だったらチップを払った方がいいと思います。
２．いくら払うの？
When you pay it by card, you can choose it. 15％、18%, and 20%. Select one of them. Or you can custamize it.It's easier to pay. But I hear some fancy restaurants give you a copy and you write the tips. In this case, you should double check because the tips are sometimes included
I've never been to the kind of restaurants, so not sure though..
3. 払わないとダメ？
Well, I think you should pay. Because most of servers rely on tips. They may work at a minimum wage, so tips are really important for them. But if the servise is terrible, you don't need it.
アメリカ、カナダはチップ文化です。ヨーロッパはそうでもないです。
