Hamo is a special fish, it's so big and vicious,

that cuisiniers need a special knife to remove bones etc..

And they need a liscence to cook this creature.


For me, it's season's greeting in Kyoto's humid summer.


It's indeed remarkable thing for us to have four seasons.
