According to a web-encyclopedia, only Japanese and Taiwanese eat Burdock root. It also says that during the Pacific War, a Japanese soldier was accused of war crimes by making an American captive eat burdock root. Nowadays, it is recognized as one of the best vegetables for controlling intestinal function. I try to eat it whenever possible, but its cooking variation is not wide. Try this one: soak chopped burdock roots in water, then season with soy sauce and sake, and leave for an hour. Dredge in starch and deep-fly in vegetable oil. It'd be like a snack you find hard to stop eating. And today's miso soup is my original, topped with the fried burdock.
