先週、日本へ1週間出張してきました！その間に、東京で知り合いが頑張っているお茶屋プラス煎茶専門カフェ東京茶寮さんに行ってきました。
今回は鹿児島と京都の煎茶をいれていただきました。秋の季節で、手作りかぼちゃのプリンをセットとして合わせてもらい、美味しかったです。深蒸し茶で綺麗なグリーンに、香りも味も良く、ほんわり甘さと旨みがでている煎茶でした。私は個人的に深蒸し茶が好きでーす💕
Was in Japan last week on business and had the opportunity to visit a friends tea cafe. They had collaborated with us 3 years ago and exhibited at the fine foods expo in Melbourne. Originally a design company, they formed a green tea brand called green brewing. Today they have a tea shop in Ginza and a tea experience cafe in central Tokyo.
全国のクアリティの高い煎茶を和菓子といれてくれました。もとはLucy alterという、デザイン会社でgreen brewing というお茶ブランドを作りました。お店の店内もモダンでシンプル。お茶をいれてくれる茶器もシンプルで綺麗。

This time round I tried the high quality tea from Kagoshima and Kyoto regions. Both regions are south west of the country and tend to deep steam their teas. This means the colour of the tea gives a deep green, aromatic, slightly sweet and what we call umami taste in Japan. My favourite is deep steamed sencha for this reason.
I paired it as a tea set with home made pumpkin green brûlée which was just perfect to go with the tea.
