Osechi are New Year's dishes. They are prepared in order to be preserved for a couple of days so that we don't have to cook during the period. Each dish has some meanings. For example, Brack beans represent a desire to work diligently as the Japanese word MAME means diligently. Shrimp represents longevity as their bodies are bent like elderly person.  Kazunoko, herring roe, represents fertility.  Kama boko, red and white fish cakes represent celebration. Since rotus root has holes, it represents bright outlook.
