PORK RAMEN
•1lb of Pork Shoulder with skin on, heavily salted, and marinated overnight in the fridge.
•6cups of water, salted pork, crushed ginger chunks and garlic cloves, green onions, boil at high heat, removing extra fats and scum. Cover and reduce at low heat, simmer for 1 1/2- 2 hours, turn off, cool completely in pot. Strain and cut pork, put aside for toppings.
•Prepare your preferred toppings
•Cook noodles [Whatever you prefer, you can prepare angel hair pasta plus a teaspoon of baking soda with it] Make sure to cook half way, for later, you boil broth, and noodles and topping will cook more
•Seasonings: Add soysauce, sake, and sesame oil
•This order: Add half cooked noodles in bowl, pour over broth, and add preferred toppings
