Recipe for spring rolls
with seasonal summer vegetables.
Eggplant, cherry tomatoes and vermicelli are stir-fried with minced meat to make spring rolls!
The eggplant is thick and the tomatoes are juicy and rich in flavor.
The thick eggplant texture and umami-rich tomato broth are absorbed by the vermicelli.
This deep-fried spring roll is highly recommended during the summer vegetable season.
《調理時間:40分》
材料10本分(3~4人分)
- 豚ひき肉 200g
- ナス 1本約200g
- ミニトマト 8∼10個約200g
- 春雨 30g
- 春巻きの皮 10枚
- オイスターソース・みりん 各大さじ1
- 酒 大さじ3
- 中華スープの素・ごま油 各小さじ1
- 五香粉 適量
- 塩 少々
- 片栗粉 小さじ1
- ニンニク・生姜 約2㎝チューブ
- 揚げ油 適量
Ingredients for 10 sticks (3-4 servings)
200 g ground pork
1 eggplant, about 200g
8-10 small tomatoes, about 200g
30 g vermicelli
10 spring roll skins
Seasoning
[A]
1 tablespoon each oyster sauce and mirin
3 tablespoons sake
1 teaspoon each of Chinese soup stock and sesame oil

A pinch of five-spice powder
A pinch of salt
1 teaspoon potato starch
About 2 cm tube of garlic and ginger
A little oil for frying
準備》
・ナスは皮をまばらにむいて2∼3㎝の乱切りに切る。
・ミニトマトはヘタを取って半分に切る。
・春雨はぬるま湯に5分ほど浸して4等分の長さに切る。
・片栗粉は水大さじ1で溶いておく。
Preparation》》
・Sparsely peel eggplant and cut into 2 to 3 cm pieces.
・Remove the stems of mini-tomatoes and cut them in half.
・Soak vermicelli in warm water for 5 minutes and cut into quarters.
・Dissolve potato starch in 1 tablespoon water.
作り方)
①フライパンにサラダ油を中火で熱し、ニンニク・生姜を炒め、豚ひき肉を加えて炒める。
1) Heat salad oil in a frying pan over medium heat, saute garlic and ginger, then add ground pork.
②ひき肉の色が変わったらナスとミニトマトを加えて炒める。
③野菜に油が回ってしんなりしたら、春雨と調味料【A】を加えて炒める。
2)When minced meat changes color, add eggplant and mini-tomatoes and stir-fry.
3)When the vegetables are softened, add vermicelli and seasoning [A] and stir-fry.
4)Season to taste with salt and five-spice powder, and add potato starch to thicken.
5) Wrap the ingredients in the spring roll skin and secure the end of the roll with starch-soluble potato starch.
【美味しく作るポイント】
(1) The ingredients for spring rolls may burst when fried if there is too much moisture, so fry the vegetables so that the moisture will evaporate.
2) Eggplant sometimes has a hard skin, so peel it sparsely to make it easier to eat.
(3) Tomatoes have a lot of water content, so it is recommended to use small tomatoes.
