I had invited Japanese and Chinese friends to a sampling party about menus for the simmered fish cooking class.

They had eaten a bite of cuisines and said to me・・・・

「The white radish absorbed seasonings very well!!」

「Tell me how to remove fishy smell?」

「It looks like to eat at Washoku restaurant!!」

They had praised my menus.

A friend was accompanied by her daughter, she have never eaten white radish.

However, she had eaten several simmered white radish !!

All of their impressions make me very happy(^^)

 

 

 

 

 

 

 

 

 



The menus is same with that cook with you on October.

I had also served washoku desert.

Almost cuisines are praised by them ,but a friend said to me too few to eat…

 

「I can eat up 4 people’s set!」

………too much to eat, I think…(^^;)

But I know why she said so that

It depends on Chinese hospitality.

 

 

 

 

 

 

 

 

A customer invited me to come a welcome party as his guest in China, when I had worked in a trading company.

I had accompanied with him to go a luxury Chinese restaurant…

Host had ordered a much amount of menus…

Then, waiters had serve us…

Sure enough, we couldn’t eat up those.

 

 

 

 

 

 

 

 

 

 

 

In China, host serve too much food to their guests as their hospitality.

On the other hand, guest feels host are impolite if they serve a few amount of food to them.

So it’s natural for chinese to feel about washoku is too few to eat, if a bowl filled very few amount of rice.

 

 

 

 

 

 

 

 

 

 

Some of Europeans and Americans also had a same feelings with chinese.

It had a funny story about that

Matthew Calbraith Perry(1974-1858) had arrieved to Japan in 1853.

In Japan,at  the period of Edo-era, a lot of Japanese comes to contact with Europeans and Americans

Edo shogunate, The rulers in Japan at that time, invite Perry to washoku dinner party to show their authority.

so they cooked total about 500 people’s menus of washoku.

the total cost is JPY 120,000,000(USD 2,162/person)

It’s a vest hospitality for Edo shogunate.

However, Perry hadn’t praised washoku,…but said「Japanese couldn’t well cooked menus to meet our taste」

Perry had dissatisfied not to be able to eat meet and its few amount.

 

 

 

 

 

 

 

 

 

 

Even though washoku hadn’t alway praised by foreigners, currently they have acclaimed for the conservations of resources of washoku.

If you cook simmered fish, you can experience all parts of fish, include borns which is used for miso soup and broth which is used for rice dish after simmering

It has a benefit for your healthy life to know how to cook washoku, especially simmered fish.
