Of course, Sashimi and Sushi are very popular Japanese cuisine all over the world.

I also like Sushi and Sashimi very much!!

I can cut sea bream into three fillets to teach briefly for foreigners like below photos

At first, everyone thinks filleting is so difficult that they can’t do by themselves, but the above photos are third time that i have filleted in my life as beginner(^^)

 

 

 

 

 

 

 

 

 

 

By the way, Do you know when Fresh fish has been eaten in Japanese ordinary homes?

In the pastime,there weren’t the refrigerators in Japanese ordinary homes, deliveries weren’t good enough to keep the freshness of fish.

So Japanese couldn’t eat fresh fish when they want to eat as usual.

Sushi and Sashimi has been a luxury food for Japanese.

Japanese has come to eat those fresh foods through economic development and spreading of refrige  .

 

 

 

 

 

 

 

 

 

 

On the other hand, Dashi, Japanese essential ingredient, has used to cook simmered fish, Chu-Ji-Rui-Ki (厨事類記)wrote in around 700 years ago, mentioned about Dashi.

Then, Dashi has been developed to use other ingredients like kelp.

I think, Japanese in ordinary home has long cooked fish by simmering with Dashi than Sashimi and Sushi.

In the period, our ancestors has developed a variety of Dashi, developed the method to remove fishy smell, developed the method to heat well with lid on.
