さて、今日はクリスマス
Well it is Xmas day today.
もちろん、クリスマスも和菓子です
Of course my tree is sweet Wagashi, Japanese traditional confectionery!
去年は緑(抹茶味)のモミの木に雪だるまや星など色とりどりの飾りつけをあしらいましたが、
Tree of last year was green (green tea taste) with lots of colorful decorations including snow man and stars,
今年は白いツリーでスッキリしたデザインの「きんとん」にしました。
きんとんは、丸いボール状の「中餡」を作ったら、その周りにそぼろ状の「きんとん餡」を飾って作ります。
this year I designed tree "Kinton," one style of Wagashi that is made from filaments of bean paste layered around a ball of bean paste, White and Simple.
まず「中餡」はサツマイモ（鳴門金時）製、
Recipe? Ball of bean past in the center :Mixure of sweet potato(Naruto-Kintoki) and white bean paste
続いて、大和芋、手亡豆と杏仁の仁から絞り出した１００％杏仁エキスで、
杏仁風味の薯蕷餡を作り、
Next, Kinton-bean-Paste (filaments of bean paste): Cook Yamato(Japanese) Yam and white bean with 100% extract of Apricot Kernel.
Sieve them then you can make so called "Jyoyo-an" with the flavor and scent of Apricot Kernel.
この籐製の濾し器でそぼろ状に濾して「きんとん餡」にしました。
I used this "Soboro-Koshi"strainer made from cane to make the "Kinton-bean-paste" from the "Jyoyo-an"
アクセントの赤は、クランベリーです
Put some cranberry on top of the Kinton.
この濾し器、製作できる職人さんがもう日本にお一人しかおられないそうですから、
大切に 大切に 使っています。
作りながら、和菓子の道具の未来に思いを馳せました。
Only one craftman is making this tool, which is so invaluable. I think about the issue of succeeding teqnique of craftman, while making Wagashi.
近所のお気に入りの和菓子屋さんには、こんな可愛いクリスマスセットもありました。
I found the Xmas wagashi bundled at my neighbor Wagashi shop.

幼稚園生の時に歌った英語の「きよしこの夜」が耳の奥にこだましています。
