Crispy thin sliced soda bread with nuts, seeds and dried fruit.
Mix whole bunch of nuts, seeds and dried fruit with soda bread dough and bake them just like a soda bread or cake. Semi-froze them for easy thin cut.
Slice thin and re-bake then with low heat oven until they get toasty and crispy.

Preparation

・Slim Pound cake mold

 

 

・Cake flour 120g 

・Baking Powder 5g (1 teaspoon) ***if replacing 1 -2 g of baking soda will enhance the bake color and taste.

・ Salt  0.8-1g (小さじ1/4弱)

・Flaxseeds 25g

・White Sesame(no skin seeds will make lighter taste) 25g

・Water 140g

add any dry fruits and seed conbination 100g-125g

i.e.

・pumpkin seeds 25g

・almonds 25g

・dry apricot  25g

・dry fig  25g

・raisens 10g 

・lemon peel 10g 

 

Steps:

1. Shift flours, baking powder and salt together.

2. Mix nuts, seed, dryfruits. 

3. Add ice-cold waters to mix. 

4. Bake 20-30 minutes  preheated 150-170℃. 
***At this point a loaf of soft soda bread. You can cut the loaf in half before you put them in freezer for 2 small batches.

5. Cool completely. Wrap and foil.  Froze it 2 hours+

6. Half-defrost for easy thin cut.

7. Put slices on the pan to dry bake 140℃-150℃ for 15-20 minuts
