I came back to Japan.

I’d been staying in Dubai from begging of March therefore I didn’t have chance to eat mountain vegetables (edible wild plants) such as bamboo shoot, butterbur etc…

Those foods are good for discharge. Luckily, my friend brought to bamboo shoot to me. Then I cooked bamboo shoot.

What did I cook today?

*Brown rice w/ red rice

*Miso soup (wakame, bamboo shoot, onion)

*Simmered soy bean and root vegetables (burdock, carrot, bamboo shoot, soy bean, dried shiitake, kombu)

*Kinpira ginger and butterbur, black sesame seeds

*Lotus root burger w/ Umeboshi paste, ohba leaf

Lotus root burger is easy to make.

1) Grate the lotus root

2) Add sea salt and pepper to (1). Make it burger form. If lotus root dough was too watery, you may add flour.

3) Pan fry the (2) both side. Spread Umeboshi paste on one side. Put the Ohba leaf on top.

4) Turn it, heat up brief time.

You may taste w/ Teriyaki sauce. I used soy sauce for other dishes today so I didn’t use soy sauce for this burger.
